About This Project

Manual harvesting of the grapes, destemming crushing  and simultaneous maceration and fermentation for 15-17 days at controlled temperature.  Racking, and aging in steel for six (6) months. Second fermentation following The Martinotti’s Method making the wine rest on the lees for at least 4 months
